Fänz
Traditional Muota Valley recipe
One of the oldest Alpine meals
Ingredients
500 g butter
4 tbsp flour
Dash of salt
1 litre milk
Preparation
Melt the butter in the pan, stir in flour, add salt and continue stirring well, ideally in a figure-eight motion. Add simmering hot milk in several portions, stirring constantly until the Fänz thickens.
Variation
Add two handfuls of fresh blueberries. This lends the Fänz a very delicious flavour.
Tip
Fänz is typically served at the table directly from the pan. Serve with bread and coffee with milk.
